Healthy Eats | Avocado Toast Anyone?

Ava-neva-cado toast!
Would you believe me if I told you in all my years on this earth I had never experienced avocado toast until I moved to Los Angeles. Sad, I know! But let me just say, once I had it, it blew my mind and I wanted it all the time. My first experience was at a Mediterranean cafe on Pico Rd across from Roscoe's chicken and waffles. I'd become really casual with the chef and always felt he made my dishes with love, they were just that good. But the avocado toast was my favorite so I brought my love for it back with me to Texas. I have yet to recreate the exact toast he made, but have made my own edition. It isn't his recipe but it is just as good and I've added some of my favorite things to it. That's what I will be sharing with you here today.

Egg-sell-ent Avocado Toast!
How are you liking my catch phrases? lol. I think they're cute. But anyways, let us get into this satisfying dish. It is super easy to make, tasteful and if you are anything like me, you like your tastebuds to have a hint of all flavors and textures. That is exactly what this recipe is going to do for you. We will start with the ingredients. Here is what you will need.
1 ripe avocado
2 eggs
1 slice of butter ( I like herb butter)
dash sea salt
dash pepper
sprinkle of crushed pepper
2 slices of roma tomato
2 slices toast of your choice ( I like jalapeño cheese bread)
Now for prep.
It is best to prepare your eggs first. If you like them over easy, fried or scrambled, it's up to you. I like mine scrambled (season accordingly). Next, prepare your toast. If you are using a sourdough bread, you can butter it up and toast it in the oven or on the stove. I simply put the jalapeño cheddar bread in the toaster, when it pops, it's done. Now that our extra ingredients are prepped, we can focus on the main character, the avocado. Cut your ripe avocado in half and smash it on the toast evenly. Don't forget to cut your tomato slices. Add your eggs on the avocado spread, top it with your tomato slices, sprinkle your sea salt, pepper and crushed peppers, and Wahla! Egg-sell-ent avocado toast! Absolutely delicious!

Owwee, don't get scared. Yes, I said the word fat, and plural, FATS. Avocado is another one of those foods I absolutely love. I can eat it with or without anything else. A sprinkle of salt and pepper or a little bit of coconut oil and it's a vibe. But of course there is more to the story. On my journey to a healthy lifestyle, I learned avocado is a good source of healthy fats, vitamin c, e, k, and b-6, along with magnesium and potassium. They are great for reducing bad cholesterol and replacing them with the good kind. If you need a snack that is going to keep you fuller longer, have an avocado. If you need a little help with your fiber intake for digestive health, eat an avocado. These bad boys are full of anti-inflammatory compounds, so why not have one or two. When it comes to macros, they fall into the healthy fats section, but remember we need balance, meaning all three, proteins, healthy fats and carbs. With our egg-sell-ent avocado toast we cover all bases! Good thing we added egg (protein) to our toast (carb). Enjoy these healthy eats with a friend, and they will cherish you forever!
